Reimagined to blend restaurant quality, bar energy and pub soul. Beloved Queen’s Park pub reopens with new owner, a thoughtful refurbishment and the appointment of acclaimed chef Tarryn Bingle.
The Salusbury, an institution of Queen’s Park’s vibrant social scene, is set to re-open on 8th July 2025 under the stewardship of three friends and locals; Gareth Cooper, Alex Payne and Jon Drape. The dining room will follow on 15th July.
Staying true to its roots as a neighbourhood hub, The Salusbury remains a proper local - but now with fresh culinary ambition and a thoughtful redesign by Natasha Hidvégi Design and 93ft (the studio behind The Pilgrim, Paddington), alongside local builders NVB Construction.
The new vision stays true to the venue’s history as a business of two halves: a local’s pub on the left, a dining room on the right, and a new private dining room seating 10-12 people. A pair of vintage Tannoy speakers installed behind the bar will bring an all-new soundtrack to life.
The new direction is helmed by two old friends and longtime residents of Queen Park, Gareth Cooper - founder of Broadwick Live, and the driving force behind Printworks and Freight island - and Alex Payne, owner of The Rectory (named The Sunday Times Boutique Hotel of the Year in 2024) and The Potting Shed, a Michelin Guide-recognised pub in the Cotswolds. Together, the pair blend hospitality experience across music, food, and drink, and intend to give The Salusbury a new lease of life while staying true to its soul.
Appointed Executive Chef is Tarryn Bingle. Her career started in Australia and spans some of London’s most respected kitchens, including time under Anthony Demetre at Arbutus, followed by nine years at Michelin-starred La Trompette. She later became Head Chef at The Rectory, working with Payne, where she crafted an elevated yet relaxed take on British country dining. Following her tenure in the Cotswolds, she returned to London at The Pem, the esteemed female-led restaurant from Sally Abé.
The new menu at The Salusbury will celebrate assured but fun seasonally-led cooking that delivers on both substance and style, without compromise on flavour. Excerpts from Bingle’s menu include a Dorset crab cacio e pepe, Suffolk lamb with smoked potatoes and a perfect Chateaubriand with fat chips for two to share. Puddings include fresh doughnuts with peaches and cream, and a wobbly custard tart. In the pub, a blackboard of daily changing snacks will feature oysters with homemade hot sauce, parmesan churros, pickled sardines with cod’s roe and tomatoes, and a proper scotch egg. There’ll also be an ‘On toast’ section, including a fresh parfait; tomato and soft ricotta; and a punchy welsh rarebit.
Design-wise, under the helm of Natasha Hidvigi Design, the refurb draws on the Salusbury family crest, with a palette of scallop and rich burgundy. Vintage and antique finds are offset by lighting from local designer Matilda Goad, and bespoke leatherwork keeps the pub feel intact.
